Need Help Planning my Orlando Vacation!?

Sounds to me you have it worked out. You have Disney tickets and Universal Tickets. I found that 2 days doing Universal was just fine. 2 of us liked roller coaster and the other 2 got sick on anything that moves the wrong way. You would definitely like Bush Gardens for all. So I would do 2 days Universal 2 Days at Bush Gardens (depending on where you are staying) the shuttle to Bush Gardens cuts into your day as well if you get rained out. 2 days at Disney since you have already been there before.
